Sending a MIME attachment is almost as easy as sending a normal text message in Eudora.
Once You have your message typed in as such:

Go to the Message menu and select Attach File (or hit <Ctrl>+H).

You should now use the familiar Windows 95 file dialog to select a file to mail (pick a small, non text file to send. e.g. a MS Word Document).
Once you have selected the file, double click on it.
You will notice that the Attached: field in your message now has the path to your file.

If you are sending the attachment to a Macintosh user, change the encode type from MIME to BinHex.
When you are ready to send the message, click on the Send button.
Now you are ready to receive your MIME message.
